Using bananas in Vietnamese cuisineThis dessert is part of the New Japanese Cuisine division of Japanese Cuisine, which incorporates elements from a variety of Western and other Asian sources in a Japanese framework, and also uses new scientific findings by food scientists.

Children like this dessert, but it can be enjoyed by adults as well.

Banana Pudding  バナナプリン

Ingredients:

3 Bananas, total weight about 300 grams or 11 – 12 ounces
¾ cup Milk
4 teaspoons Sugar

Method:

First peel the Bananas and place in a microwave oven on High for 2 – 3 minutes.

While the Bananas are still hot, combine with the Milk and Sugar and process in a blender or food processor until smooth.

Pour into individual molds or a larger serving dish and chill for several hours in the refrigerator until the pudding is firm.  These quantities will serve 2 persons.

Japanese cooks recently have been researching ways to serve Bananas at their best, bringing them to sweet ripeness and extending shelf life.  The methods used are simple, but you need to know a couple of secret techniques.

And of course, Bananas are important around the Pacific Rim, enjoyed as Fried Bananas in a Vietnamese dessert and as Baked Bananas at picnics and luaus in Hawaiian cuisine.
