Cabbage Meets Ginger
A Triple-Ginger Dish
This is an Asian Fusion dish that takes advantage of the affinity between Ginger and Cabbage.
Since it uses Ginger in several forms, it is a Triple Ginger preparation, which should be attractive to true fans of the rhizome.
2 ounces of peeled, grated Ginger,or more to taste
¼ cup Lime Juice
¼ cup Sugar
Pinch of ground Ginger
1 tablespoon Soy Sauce, or more to taste
1 small head of thinly sliced green Cabbage, about 8 ounces
1 Carrot, peeled and cut into fine julienne
1 tablespoon picked Ginger, drained
1 tablespoon crushed Peanuts, for garnish
First, whisk together the grated Ginger, Lime Juice, Sugar, Ground Ginger and Soy Sauce. Taste, and if desired, add more Soy Sauce.
Toss together the Cabbage, Carrot and Pickled Ginger root. Drizzle the dressing over the vegetables and toss well. Scatter some finely crushed Peanuts over the salad.
This quantity would serve one person comfortably or could be divided between two people.
