Scrambled Eggs with Crab Meat

This Japanese version of Scrambled Eggs is good at breakfast or a brunch.  It’s good by itself, and also seems to go with with a few slices of Avocado on the side.

Scrambled Eggs with Crab Meat

Ingredients

1 finger of fresh Ginger
2 Green Onions
4 Eggs
½ teaspoon White Pepper
2 tablespoons Water
½ cup cooked and shredded Crab Meat
1 tablespoon Vegetable Oil

Method:

First peel the Ginger and mince finely.

Chop the Green Onions finely.

Beat the Eggs lightly with the White Pepper an a little Water in a bowl, using a  whisk.

Heat a skillet and add the Oil.  When it is hot, add the Ginger and Onion and fry a few seconds.

Add the Crab Meat to the Egg mixture and stir to combine.  Add to the hot skillet and scramble quickly, preferably with a wooden spoon, until the Eggs are done and fluffy. If desired you might season with a bit of Salt or Soy Sauce.

This recipe will serve two people comfortably for a breakfast, bunch or light lunch with another dish. It seems to have an affinity for sliced Avocados on the side.
