Good with Naan or Pita

How to cook delicious and healthy Asian dishes using tomatoes


This Fusion recipe illustrates some of the ways Ginger can enhance the flavors of other foods, like the Tomatoes used to make this spread.  It would be good with Naan or Pita bread and can be made a day or so in advance  and chilled before a party.

Ginger Tomato Chutney

Asian Fusion


3 tablespoons grated peeled fresh Ginger
2½ pounds plum Tomatoes, chopped
1½ pounds chopped Onion
½ cup Apple Cider Vinegar
2 tablespoons Sugar
3 Garlic cloves, pressed
1 tablespoon  Mustard Seeds
1 tablespoon  ground Cumin
1 Cinnamon stick
½ teaspoon Salt
½ teaspoon Cayenne Pepper
¼ teaspoon ground Cloves


Chop the Tomatoes and Onions and express the juices from the Garlic cloves. Place in a a large saucepan with the Vinegar, Sugar and Ginger, Mustard Seeds, Cumin, Cinnamon, Salt, Cayenne and Cloves. Simmer until reduced to about 3½ cups – about 35 minutes. Season with additional Salt and Pepper to taste and cool.

This can be served at room temperature the following day.
