Good with Roast Pork
A Luau Favorite
Pineapple, although it originated elsewhere, has become symbolic of the Hawaiian Islands and Hawaiian cooking. Grilled Pineapple Slices are a favorite at Luaus and other Barbecues in the Islands. They are especially good served with Pork, for example Spare Ribs or Pork roasts.
This works well on a charcoal grill or hibachi.
6 fresh Pineapple slices, about half an inch thick, trimmed, from about half a Pineapple
3 tablespoons Chili Sauce, like Sichuan Chili Sauce
2 tablespoons Rose’s sweetened Lime Juice
1 tablespoon Dijon-style mustard
First prepare the charcoal grill so the coals are hot.
Slice and trim the Pineapple slices. Combine the Chili Sauce, Mustard and Lime Juice in a small bowl. Mix well. Brush over both sides of the Pineapple slices. Let stand about 15 minutes at room temperature.
Brush the grill or barbecue with Oil.
Grill the Pineapple slices over high heat, 1½ to 2 minutes per side, or until they are golden brown. Cut each slice in half if desired and serve alongside grilled meats such as Pork.
