Agrodolce Sauce for Lumpia

This sauce is typically served on the side with hot, freshly cooked .  It is quick and easy to make.  This recipe makes  enough to gowith the larger recipe, Lumpia Shanghai for a Group.

Sweet and Sour Sauce for Lumpia Shanghai

Filipino

Ingredients:

4 teaspoons Cornstarch dispersed in
2 tablespoons Water or Stock
½ cup Vinegar
½ cup Sugar
½ teaspoon Salt
4 tablespoons Tomato Catsup
2 tablespoons Cooking Oil

Method:

First dissolve the Cornstarch in the Water.

Next combine the Vinegar, Sugar, Salt and dissolved Cornstarch and mix well.

Heat the Oil and briefly fry the Tomato Catsup in the hot Oil. Add the Vinegar-Sugar mixture and cook until it boils and thickens. A whisk is convenient for stirring while the sauce thickens, to make it as smooth as possible.  The recipe makes about 1½ cups of sauce, and is enough to go with the Lumpia recipe for a crowd that makes 70 pieces.
