The term Tikka may be derived from the Hindi word tukra, meaning “spices.”  It is an Indian mix often used on boneless pieces of meat to be grilled. The finished dish, usually served on skewers, is also commonly called Tikka.  A Tikka mix is similar to a Tandoori mix.

This recipe makes about half a cup.  To use it, first mix the ingredients, then skewer the meat, such as boneless pieces of Chicken, Pork or Lamb and let rest about an hour before grilling.

Tikka Mixture  टिक्का

Ingredients:

Using olive oil to cook Asian foods

Olive Oil

½ cup Oil, such as Olive Oil
2 teaspoons minced Garlic
1 teaspoon minced fresh Ginger Root
4 teaspoons ground Coriander
2 teaspoons ground Cumin
¼ teaspoon ground Cayenne Pepper
¼ teaspoon ground Black Pepper
¼ teaspoon ground Cinnamon
¼ teaspoon ground Cloves
¼ teaspoon ground Cardamom
2 teaspoons fresh Lemon Juice
1½ to 2 teaspoons Salt

Combine all the ingredients in a mortar and grind with a pestle until a smooth mixture forms.  Or, you may use a food processor or blender. Use tho to cover the skewered meats to be grilled.
