How to cook Asian dishes with Sesame Oil

A number of Pacific Rim cuisines broil Heart, with a result which is similar to Beef Steak, at a fraction of the price. Usually a little extra preparation is required, to tenderize the Meat.  This Korean version is very simple:

Ingredients

1 pound Beef Heart

The Mixture:

How to use Soy Sauce

Soy Sauce

2 tablespoons Soy Sauce
1 tablespoon Prepared Sesame Seed — see separate recipe on this site
½ teaspoon ground Black Pepper
1 – 2 Green Onions
1 – 2 cloves Garlic
1 tablespoon Sugar
1 tablespoon Oil, preferably Sesame Oil
1 tablespoon Flour

First clean the Heart and cut it into thin slices about 3 inches square.

Combine the Mixture and put the Meat slices in a dish, cover with the Mixture and let stand from 1 to 3 hours.

When ready to cook, broil quickly until no longer pink over a hot charcoal fire or gas grill and serve immediately. Alternatively, this dish may be fried in a small amount of hot oil.  In that case, the Korean cook will typically fry the Heart slices until well browned, then add a bit of water, cover and steam until quite tender, about another 10 minutes.
