How to cook Asian dishes with Sesame Oil

This variation on the traditional Cold Roast Beef Salad has a couple of Asian Fusion touches.  The recipe takes a little over half an hour to make, aside from the marinating time. It makes enough for about six people, depending on what other dishes are served.

Chinese Fusion

Ingredients

Snow Peas2 pounds Beef Flank Steak
½ cup bottled Teriyaki Sauce
1 pound fresh Snow Pea Pods
¾ pound fresh Spinach leaves
1 pint Cherry Tomatoes

The Mixture (Dressing):

½ cup fresh Lemon Juice
6 tablespoons Light Soy Sauce
¼ cup Olive Oil
2 tablespoons Asian Sesame Oil
1 piece fresh Ginger Root, about an inch long
1½ teaspoons Sugar
½ teaspoon White Pepper
½ cup Chinese Fried Noodles, as garnish, optional

First brush the Flank Steak with Teriyaki Sauce and let it stand to marinate for 2 to 3 hours.  There are a number of good brands, mostly Japanese, from companies like Kikkoman.  They will all work.

Meanwhile, combine the Mixture and set it aside. It should be put in a tightly fitting jar and shaken vigorously to mix it thoroughly.

Remove the strings from the Snow Pea Pods.  Wash the Cherry Tomatoes and Spinach and let stand to dry fully before preparing the dish.

The Ginger should be peeled and finely minced.

When ready to prepare this dish, preheat the broiler and broil the Flank Steaks.  Place them about 6 inches from the heat and turn once.  Cook until medium-rare, about 6 to 8 minutes, or more thoroughly, according to preference.

Cool the Flank Steaks a few minutes until they are cool enough to handle.  Cut in thin slices across the grain and let them rest another 20 minutes.

Blanch the Snow Pea Pods in boiling Water for 30 seconds.  Drain and rinse under cold Water to stop the cooking.  Let them drain well before the final assembly.

To finish the Salad, line a serving platter with the Spinach Leaves.  Mix the sliced Beef with the Pea Pods and pour the Mixture.  Toss well to mix thoroughly.

Put the Beef and Peas in the center of the platter.  Garnish the outside rim with the Cherry Tomatoes.  Scatter Fried Chinese Noodles on top as a garnish if you wish. This is an optional touch.  Canned Chinese style Fried Noodles can be used for this.
