An Afghan Dish from the Silk Road
Topping for Burani Banjan
This Yogurt sauce is typical of the cuisine of the Silk Road. It goes well with the Afghan Eggplant dish called Burani Banjan.
2 cups plain Yogurt
2 cloves Garlic
Pinch of Salt
Line a colander with several layers of cheesecloth. Pour the Yogurt into this strainer and let it sand over a bowl for an hour. While it is draining, peel the crush the Garlic.
When the Yogurt is fully drained, mix with Garlic and Salt to taste. This goes with dishes lke Burani Banjan. The recipe makes about 2 cups of thickened Yogurt Sauce. Regular, plain, whole-milk Yogurt should be used to make this sauce, not sweetened, low-fat or other forms of Yogurt.
