Ginger Meets Feta Meets Tomatoes
Pot Stickers with a Mediterranean Touch
In this Chinese Fusion dish, Won Ton or Chiao-Tzu Wrappers are used to contain fillings with a true Fusion element — Tomatos and Feta Cheese, combine with Ginger and Soy Sauce in a result that is greater than the sum of its parts. Pot Stickers or Gyoza or Chiao-Tzu, to use a few of their names, are analogues of Italian Ravioli. Did Marco Polo carry the concept back from the court of Kublai Khan, or was it an Italian import to China?

Put Mixture No. 2 in a food processor and blend until smooth.
To complete the dish, lay out a dozen Won Ton skins on a large platter, and put about 1½ teaspoons of the Cheese Mixture in the center of each Won Ton Skin. Cover with another Won Ton Skin and crimp the sides to seal the edges. Meanwhle heat the Tomato mixture; this will be the sauce for the Pot Sticklers.
Heat a large pot of water, or better still, two large pots and put the Pot Stickers in the Water after it boils. When the Water begins to boil again, set a timer and boil for just 3 minutes, then drain in a colander.
Arrange some of the Pot Stickers on a serving platter and top each with the hot Tomato Sauce. Four or Five Pot Stickers makes a nice serving for one person. This recipe can easily serve six persons, depending on what other dishes are prepared.
