Star Anise Meets Ginger and Soy
While there is no tradition of Pot Roasts in Asian cuisines, y ou can cook a Pot Roast with Asian flavorings to make a simple main dish.
Beef Pot Roast Asian Style
1 tablespoon Vegetable Oil
3 – 4 pounds Beef Brisket or Boneless Chuck Rost
½ cup Soy Sauce
5 slices fresh Ginger root
4 Star Anise
2 – 3 cups peeled and cued Rutabaga or White Turnip
¼ cup minced Green Onions
First heat a large heavy iron skillet or Dutch oven until it is hot. When it is hot, put in the Oil.
When the Oil is hot, after about a minute, put in the Meat and brown well about five minutes on a side, until well browned, covering the pan to reduce splattering.
After the Meat is well browned, add the Mixture and cook covered about 3 hours, turning the Meat once or twice an hour, and adding Water as needed.
When the Meat is tender, remove the Star Anise, and add the Rutabaga or Turnip cubes.Add more water as needed, cover again and cook another 30 minutes or so, until the Vegetables are very tender.
Remove the Meat and after it is cooled a bit, slice very thinly. Seerve on a platter with the cooked Vegetables on the side and garnished with the chopped Green Onions. This goes well with steamed White Rice and makes a simple main dish for 6 to 8/
