Specially Nuanced Sauce
Oyster Sauce gives a special nuanced flavor to Broccoli. This version uses a pre-prepared Stir-Fry Oyster Sauce, often used in Chinese restaurants for convenience. The sauce is not a bad one, and has other uses.
Stir-Fried Broccoli with Oyster Sauce
4 cups Broccoli florets, blanched
1 clove Garlic
¼ cup Green Onions, chopped coarsely, both green and white parts
1 recipe Stir-Fry Oyster Sauce
1½ tablespoons Peanut Oil or other Vegetable Oil
Well before cooking time, wash and clean the Broccoli, divide into florets, blanche and set aside to dry fully.
Chop the Green Onions and chop the Garlic finely. Set these aside until cooking time.
Make the Stir-Fry Oyster Sauce. This can be kept in the refrigerator until cooking time.
To cook, heat a wok until hot. When it is hot, put in the Oil and when the Oil is hot, Then put in the Garlic and Green Onions and stir-fry a few seconds.
Put in the Broccoli florets and stir-fry about a minute.
Add the Stir-Fry Oyster sauce and bring to a boil. Cover and cook over low flame u ntil the sauce thickens, about four minutes, then serve.
