Sour Cream and Yogurt Showcase the Ginger
Echoes of Seville
This simple Asian Fusion dessert combines Pineapples and Bananas with some Western ingredients like Sour Cream and Yogurt very effectively. Butter is another Western touch, along with the Orange Marmelade. While any Orange Marmelade will work, one made with bitter Seville Oranges seems to enhance the other flavors elements, including the Crystallized Ginger.
Tis recipe makes about four servings and takes all of about ten minutes to make.

Pineapple and Banas with Ginger Cream Sauce
For the Ginger Cream Sauce:
½ cup Sour Cream
3 tablespoons plaine Yogurt
½ teaspoon Vanilla Extract
2 tablespoons Orange Marmalade, preferably Seville
1½ tablespoons chopped Crystallized Ginger
For the Fruit:
1 can unsweetened Pineapple chunks, drained, 20 ounces
2 ripe firm Bnanas
2 tablespoons Butter
2 tablespoons Sugar
Drain the Pineapple pieces and set aside. Peel the Banans, and cut in half-inch slices. Set aside.
Chop the Crystallized Ginger daly finely. Combine with the other Sauce ingredients and whisk to mix in a small bowl.
To complete the dish, heat the Butter in a heavy skillet over medium fire. Add Pineapple and Bananas. Sprinkle Sugar on top. Toss gently with a wooden spoon to mix and coat until the Fruit is light brown.
Put into individual serving dishes. Spoon the Sauce over the top and serve.
