Everyone’s Favorite Cookie

Baking Powder
Or at any rate, everyone’s favorite Chinese cookie, or so it seems. These are popular desserts at Chinese restaurants and sell well at Chinese bakeries. They are also easy to make:
Almod Cookies

Ingredients:

Sesame Oil
¼ cup Lard
1 cup Sugar
2 tablesoons Vegetable Oil
½ teaspoon Sesame Oil
1 Egg
The Mixture:
1 cup Rice Flour
teaspoon Baking Powder
½ teaspoon Salt
1/3 cup finely chopped Almonds
1 teaspoon Almond Extract
Method:
First cream together the Lard and Sugar thoroughly.
Combine The Mixture and set aside.
Next add the Vegetable Oil, Sesame Oil and Egg and beat until fluffy. An electric mixer comes in handy here.
Next add The Mixture to the batter and mix well.
Put half the chopped Almonds and the Almond Extract into the batter and continue to mix thoroughly.
Make the dough into alls aout an inch in diameter. Top each ball with a bit of chopped Almond.
To finish, place the balls two inches part on a greased cooky sheet. Bake for 20 minutes at 350° F. Cool on a wire rack. This makes about 2 dozen cookies.
