A Ground Meat and Vegetable Classic
Tomatoes, Peas Complete the Dish
“Keema” (Hindi:कीमा) refers to ground or minced Meat, and several kinds may appear in this dish, along with Peas – which may be frozen – and Tomatoes. So this is an Indian dish for cooks in a hurry.
Keema with Peas
Mixture No. 1:
¾ cup finely chopped Onion
1 tablespoon finely chopped Ginger
1 teaspoon finely chopped Garlic
1 tablespoon Vegetable Oil
Mixture No. 2:
1 tablespoon Curry Powder
½ teaspoon ground Turmeric
¼ teaspoon ground Cinnamon
¼ Coriander Seeds
¼ teaspoon ground Cumin
1 cup chopped fresh or canned Tomatoes, unsalted
1 tablespoon Lime Juice
1 teaspoon Sugar
1 pound ground Meat, “Keema” कीमा- such as Beef, Veal, Lamb
1 cup Peas, fresh or frozen
½ teaspoon crushed Hot Red Pepper flakes, or more or less as desired
Freshly ground Black Pepper to taste
First measure out, chop and lay out the various ingredients to be used. Arrange the three Mixtures
When ready to cook the dish, Blend the ingredients of Mixture No. 1 in a blender or food processor into a fine puree and set aside.
Cook The Mixture No. 1 in a skillet until it just stats to brown, but do not let it brown.
Add Mixture No. 2. Stir to mix. Add the Keema and stir to mix and cook, mashing down with a heavy spoon to break up any lumps
When the Meat has lost its raw look, add Mixture No. 3. Add the Red Pepper and Black Pepper, mix, cover and simmer 30 minutes.
Finally add the Peas and cook until they are tender, another 5 to 10 minutes.
Serve with steamed Rice and a Raita or salad of sliced Cucumbers and Yogurt. Serves about 4. Preparation time about 10 minutes; cooking time about half an hour
