Coconut Milk

There may be as many recipes for Bibingkas, a custardy cake popular in the Philippines, as there are for Lumpia or Adobo.  Bibingkas often appear at meriendas,or afternoon teas.  This version is popular at Christmas in the Philippines and is often made at home and also often sold outside churches during the holidays.

Steamed Rice Cakes / Bibingkas

Ingredients:

Using Baking Powder in Vietnamese cuisine

Baking Powder

3 tablespoons unsalted Butter, melted, plus more for greasing pan
1 frozen Banana leaf, thawed, washed and dried
1 cup glutinous Rice Flour
1 cup Sugar
2½ teaspoons Baking Powdeer
Pinch of Salt, preferably Sea Salt or Koshe
1 cup Coconut milk
½ cup fresh Mil
3 large Eggs
1 Salted Egg, hard-boiled and thinly sliced
1 tablespoon sweetened Condensed Milk
½ cup shredded Edam or Emmenthaler Cheese

Method:

First, head the oven to 350 degrees Fahrenheit.  Greast an 8-inch csst-iron skillet with Butter and line i ith te Banana leaf, trimmed all but an inch or two ov overhang.  Grease the top of he Banana Leaf as well.

 

In  a lare bowl stir Rice Flour, Sugar, Milk, Buttere and raw Eggs.

Whisk the Coconut Mixture into the Flour Mixture until it is iincorporated.

Pour he Butter into the skillet and top with the Salted egg.

Bake until a tothpick inserted into the center comes out clean, abou 40 – 45 minutes.

Brsh the cake with the Condensed Milk, sprinkle with the Cheese and bke until the Cheese melts, anther 2 – 3 minutes

Remove from the oven and let cool slightly.  Cut into wedges and serve.  The Cheese imparts a savory quality that is  characteristic of this type of Filipino sweets.  The Banana Leaf imparts a delicate aroma.  You can get Banana Leaves at stores that sell Filipino groceries or some other Asian markets.

Meriendas are afternoon teas with pastries.  Bibingkas of different types are popular at Meriendas throughout the year.
