Mirin

Kalbi, or Korean style Barbecued Pork, is one of the basic Korean home style dishes that are basic to making a simple Korean meal. It’s easy to make and the marination seems to bring out the flavor of the meat.

Ingredients:

1½ pounds boneless or bone-in Pork Short Ribs
1 cup Soy Sauce
½ Onion, chopped
½ cup Garlic Cloves, peeled
½ cup Scallions, chopped
½ cup Japanese style sweet cooking wine, Mirin
1 cup fresh Orange Juice
¼ cup Sugar
½ cup Sesame Oil
2½ tablespoons toasted Sesame Seeds
Canola Oil or other vegetable oil

Method:

First use a sharp knife to separate the individual ribs, if they are bone-in.  If they are boneless, use a sharp knife to slice the meat shinly.

Combine the Soy Sauce, Onion, Garlic, Scallions, Orange Juice, Sugar, Sesame Oil, and Sesame Seeds in a blender and puréethem together.  Pour the resulting marinade over the Short Riobs and massage it into the meat.  Cover and refrigerate at least an hour and up to 2 days.

When ready to serve, heat a charcoal or gas grill to hot and coat ;lightly with Vegetable Oil. Grill the ribs under the charcoal or over a hot gas grill about 4 minutes per side.  Transfer to plates or a bowl.  This makes 4 to 6 servings.

The result is a spicy, sweet marinade, grilled until slightly charred and crusty. This goes with White Rice, such as Sticky Rice, and Kimchi.
