Green Papaya

This is a simple Vietnamese version of a type of Green Papaya Salad that ion local variants throughout the cuisines of Southeast Asia.  A key element here is Vietnamese Coriander or Rau Ram.  If not available, use regular Coriander leaves.

Green Papaya Salad 



For the Salad:

2 pounds unripe Green Papaya\
12 sprigs fresh Vietnamese Coriander leaves, Rau Ram. or regular Coriander, if not available, plus a few extra for garnish

For the Dressing:

Three Crabs Brand Fish Sauce

Fish Sauce

2 tablespoons Fish Sauce
2 tablespoons Sugar
Juice of 1 Lime
1 fresh hot red Chili Pepper


Peel the Papaya and remove the seeds  Slice the flesh thickly using a sharp knife or mandolin.  Put in a large bowl.  Chop the Coriander, leaves and stems, coarsely . Stir in the Coriander leaves and chopped stems.

Separately make the Dressing, first removing seeds from the hot Pepper.

Pour the Dressing over the Papaya slices. ,mix to combine and serve with a sprig or two of Coriander on top.
