Bamboo Rice is one of a class of Japanese dishes which combine Rice with one or more other ingredients.

This recipe is good whenever fresh Bamboo is available. Canned or shrink-packed Bamboo in brine also work well with this. The use of Sake or Mirin when cooking Rice enhances its flavor and aroma and may be called a secret ingredient.

This is a fairly quick and simple preparation.

Bamboo Rice



Takara Mirin Sweet Cooking Sake


1½ cups rice [Japanese cups]
7 – 8 ounces Bamboo Shoots, about 200 grams, preferably fresh
2 tablespoons Soy Sauce
½ teaspoon Salt
1½ teaspoons Mirin, Japanese sweet cooking sake
4 cups water [again Japanese cups]


After washing any brine off the Bamboo, cut it in thin slices.  Wash and rinse the Rice and place in an electric rice cooker with the bamboo and Sake or Mirin and cook in the usual way for your Rice cooker.  The Japanese wine makes for a  very fragrant and delicate Rice mixture with the Bamboo.  This is almost an instant food and welcome most seasons of the year when fresh Bamboo is available, or the preserved or canned varieties can be substituted.
