Cooking Asian dishes with Asian eggplants

The Chèvre Cheese and European Bread make this recipe, conceived by some European residents of Thailand, a Thai Fusion dish. The Raisins, too, if used, contribute to the Fusion scene.  This could be a substantial appetizer or one of several dishes for a lunch or other meal.

Eggplant Sandwich  มะเขือแซนวิช

1 large Eggplant
6 slices ripe Tomatoes
6 thick slices country or peasant Bread
18 whole Basil Leaves
2 tablespoons slices Basil Leaves

Mixture 1:

1 tabespoon fresh Basil leaves
2 teaspoons grated Lemon Zest
1 teaspoon Olive Oil
2 – 4 tablespoons Golden Raisins
Salt to taste
Freshly ground Black Pepper to taste

Mixture 2:

9 ounces Chèvre Cheese
2 tablespoons Olive Oil
Salt to taste
Freshly ground Black Pepper to taste


First preheat the oven to 400º Fahrenheit.  Price the Eggplant several times with a kitchen fork.  Wrap it in foil and take for an hour

While the Eggplant is baking, mix and prepare both Mixtures and set aside each in a small bowl for use as soon as the Eggplant is cooked.

Make half a dozen good sized Tomato slices from large ripe tomatoes.  Cut them about a quarter inch thick and set aside.

Ct half a dozen slices of thick country or peasant Bread and set aside.

Slice enough Basil leaves thinly to make about 2 tablespoons and set aside.

Clean the other Basil leaves, dry and set aside.

When the Eggplant is finished baking, unwrap it and let it cool enough to handle.  Cut the Eggplant in half.  Scoop out the pulp, discarding as many seeds as possible.  Coarsely chop the remaining flesh and put in a bowl.

Stir in Mixture 1 and mix with a wooden spoon.

Around this time turn on the gas broiler, so it is hot in a few minutes for finishing the dish.

To serve the dish, spread the Eggplant mixture evenly over the Bread slices.  Cover with the whole Basil leaes.  Spread with Mixture 2, containing the Cheese, on top of the Basil and top each sandwich with a slice of Tomato.  Brush the Tomatoes with any remaining Oil and sprinkle with a little Salt and Pepper.

Put the sandwiches on a baking sheet and broil in  a hot broiler 2 to 4 inches from the heat just until the Tomatoes start to brown.  It will take 2 to 3 minutes.  Sprinkle them with the reserved finely slices Basil and serve immediately. The portion size is intended to be one Eggplant Sandwich per person as an appetizer.
