Sweet Potatoes are high iin antioxidants There is research showing they can help maintain good memory, control diabetes and help prevent heart disease and cancer. It;s a pity they are often paired with sugary, heavy ingredients in the Standard American Diet. Especially since a number of Asioan cuisines have a variety of ways to use Sweet Potatoes.
This Korean recipe for Fried Sweet Potatoes benefits from a delicate sauce that is often used as a dipping sauce when Vegetables are prepared Korean-style. The use of Pine Nuts is critical here, and adds a special note of flavor, aroma, and texture to the Sauce.
Fried Sweet Potatoes
2 medium Sweet Potatoes
3 tablespoons Flour
3 tablespoons Oil
Salt to taste
First, wash and peel the Sweet Potatoes. Cut them crosswise into slices about a quarter inch thick.
Par-cook in boiling, slightly salted Water until they are slightly tender. Take them out and drain well.
Dip the slices in beaten Egg, then dredge in Flour/
Fry in a small amount of Vegetable Oil until light brown. Drain on kitchen paper and transfer to a serving dish.
These are usually served with Vinegar Soy Sauce on the side for dipping
Vinegar Soy Sauce
6 tablespoons Soy Sauce
6 tabespoons Vinegar
2 tablespoons Sugar
1 tablespoon chopped Pine Nuts
Combine Soy sauce, Vinegar and Sugar. Mix well and pour into individual small dishes for dipping. Chop the Pine Nuts finely and sprinkle a little bit on each small dish.
