This is a typical Indonesian peanut sauce, served with sates and also forms the basis for the classical Indonesian salad, Gado Gado.

This recipe makes about 3 cups and takes about a quarter of an hour preparation time and about 10 minutes to cook.

Using garlic to make Vietnamese soup with pork cabbage rolls

Garlic – a Key Ingredient

1½ cups shelled fresh Peanuts, about 8 ounces
2 tablespoons Peanut Oil or other oil
½ Onion, peeled and chopped
1 clove Garlic, peeled
½ teaspoon dried Hot Peppers
1 tablespoon ground Ginger
1 teaspoons Brown Sugar, packed
2 tablespoons fresh Lemon Juice
2 cups hot Water, more if needed
Salt and Black Pepper to taste


First fry the Peanuts in the Oil in a frying pan, stirring constantly until browned.  Transfer to a food processor or blender with the Onions, Garlic, Hot Peppers, Ginger, Brown Sugar and Lemon Juice.  Purée until very smooth, adding a little hot water if necessary so the mixture churns well.

Work in more hot water, adding enough to make a sauce that is thick enjough to coat the spoon.  Transfer the sauced to a saucepan.  Simmer about 2 minutes, stirring.  Taste for seasoning.

This sauce can be made up to a couple weeks in advance and kept covered in the refrigerator. This recipe makes enough for about a dozen people for a Rijsttafel banquet.
