China, Hong Kong - Common KingfisherThese traditional Chinese Millet Cakes or Mllet Bread are typically cooked on a hot griddle on  street corners.  They may be made less sweet, or not at all, by reducing or eliminating the amount of Sugar used.

Millet Cakes  小米蛋糕



6 Eggs
1 cup Confectioner’s Sugar
1 cup Millet Flour
1 teaspoon Salt
Oil for frying


Beat the Eggs for about 2 minutes.  Add the Sugar and beat a total of 10 minutes.  Add the Millet Flour and Salt and beat another coulple minutes.

Drop the batter by teaspoonfuls on a greased griddle and brown, turning to brown the other side.

If you do not like it so sweet, reduce the Sugar, or eliminate entirely, according to taste, replacing the omitted sugar with an equivalent amount of Millet Flour
