Soup with Tofu

Tofu Soup is yet another Japanese soup in the repertoire of the Japanese cook.  It can appear any time, including breakfast, and is quickly made.

Tofu Soup




2 pints Dashi Stock

Tofu Medium Firm


100 grams diced Tofu
1 Long Onion / Naganegi, chopped – or use Leek or Green Onion
50 grams chopped Spinach
1/2 tablespoon Soy Sauce
1 1/2 teaspoons Salt
1 teaspoon finely chopped Ginger


Bring the Dashi Stock to a boil with the Onions, Spinach, Salt and Soy Sauce.  Let it simmer five minutes.

How to use Soy Sauce

Add the Tofu.  Sprinkle with the Ginger and let it simmer another five minutes before serving.  Adapted from Joan Itoh.
